Rosemary Pork Chops and Spinach with Mashed New Potatoes

A simple lineup of ingredients and a quick and easy cooking method, creates a delicious meal packed with flavor and color. Juicy pork chops with just a hint of rosemary and garlic over savory spinach and simple mashed potatoes. So good.

 

Rosemary Pork Chops with Sautéed Spinach

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 1 pound boneless pork chops
  • 3 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 2 cloves garlic, minced or pressed
  • kosher salt and pepper, to taste
  • 20 ounces baby spinach
  • 1 tablespoon olive oil
  • 1 lemon

DIRECTIONS

  1. Heat a heavy pan over medium high heat.
  2. Combine olive oil, rosemary, garlic, salt and pepper in a small bowl.
  3. Brush one side of each pork chop with mixture.
  4. Gently place each chop, olive oil side down, onto the pan. Brush the other side of each chop with olive oil mixture.
  5. Let cook for about 2 minutes, flip, and cook another 2-3 minutes or until the internal temperature is at least 150. Remove from the pan and let rest.
  6. Add 1T olive oil to the pan and let it heat. Place as much spinach as you can in the pan, stir until wilted enough to add the rest of the spinach.
  7. Cook spinach until just wilted. Then season with lemon juice to taste.
  8. Plate spinach and top with pork chops.

Mashed New Potatoes

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 1 pound new potatoes
  • 1/2 cup water
  • 1/4 cup milk
  • 2 tablespoons butter
  • kosher salt, to taste
  • pepper, to taste

DIRECTIONS

  1. Quarter potatoes and place in a microwave safe dish.
  2. Add water and cover.
  3. Cook on high for 5 minutes. Remove from microwave and stir. Cook for another 5 minutes.
  4. Let sit covered for a few minutes, then drain the water.
  5. Use a potato masher and mash in milk and butter.
  6. Season with salt and pepper.

NOTES

KID NOTE: Consider leaving the rosemary and garlic off the pork chops and simply seasoning them with salt and pepper.
