Pork Chops with Mushroom Pan Sauce, Mashed Potatoes, and Green Beans

I was almost 30 before I would touch a mushroom. It was so bad I would tell waiters I was allergic. Fast forward (not telling how long) and I can’t get enough of them! Raw, not my favorite, but sautéed in butter with a little balsamic – whoa! To get this meal on the table quickly, the first thing you need to do is get the water for the mashed potatoes boiling. While you wait, chop the onion, press the garlic, and season your pork chops. When the potatoes are ready to boil, you should be able to cook the chops and start on the mushroom sauce. The green beans take no time at all and the entire meal should be on the table in 45 minutes. A little over my 30 minute sweet spot, but well worth the extra effort!
