Game Day Snacks: 3 Delicious Appetizers

We are coming up on one of the most important snacking days of the year, the Super Bowl! Instead of sticking to your regular routine of chips and wings, why not switch things up with a few delicious snack recipes. We’ve got 3 of our favorite appetizers to share with you that will impress your friends and family this year. These recipes don’t take much time to prepare – we’ve even got a slow cooker meal on here – so you will have plenty of free moments to still enjoy the day.

“Cowboy” Sliders

Servings : 4  Prep Time : 20 Minutes

 

8 slider buns

1 pound ground beef, 80/20

1 jalapeno, seeded and finely chopped

4 slices bacon, raw and finely chopped

3/4 cup cheddar cheese, grated

1/2 teaspoon garlic powder

1/2 teaspoon kosher salt

1/2 teaspoon pepper

 

Combine all ingredients (leaving the jalapeños out of the kid portions) in a large

bowl with your hands.

Form into small patties that will fit nicely in your slider buns.

Grill outside or in a heavy pan. I used my cast iron griddle and they worked great.

Serve on slider buns with condiments of your choice.

nachos

 

Loaded Slow Cooker Beef Nachos

Servings : 4  Cook Time : 7 Hours  Prep Time : 30 Minutes 

 

2-3 lb beef rump roast

Kosher salt and pepper

1 tablespoon olive oil

12 oz mild banana peppers

2 cups beef broth (or water)

3 cloves garlic, minced or pressed

1/2 bag tortilla chips, not the thin ones

14 oz refried beans

1 cup Monterey jack cheese (shredded)

1 cup tomatoes, chopped

1 avocado, diced

1/2 cup sour cream

1/2 cup cilantro, torn

1 cup salsa

 

Season beef with salt and pepper.

Heat oil in heavy skillet over medium high heat until it shimmers. Brown beef on

all sides and transfer to the slow cooker.

Add banana peppers, broth or water, and garlic.

Cover and let cook for 7-8 hours on low.

Remove the beef from the slow cooker and shred with forks.

Preheat oven 350. Line two baking sheets with foil and arrange a single layer of

tortilla chips on each. Spread a thin layer of beans on each chip. Top with beef with

shredded cheese.

Bake for 10 minutes or until cheese is nice and bubbly.

Top each nacho with tomatoes, avocado, a dollop of sour cream, and torn cilantro.

Serve with salsa.

crab dip

 

Spicy Crab Dip

Servings : 8  Cook Time : 20 Minutes  Prep Time : 20 Minutes 

 

1 teaspoon olive oil

1/4 cup onion, minced

1 clove garlic, pressed

1 tablespoon jalapeno, minced

1/4 cup light beer

1 cup heavy cream

1/2 cup cream cheese

1/2 cup Gouda cheese (or Velveeta)

8 ounces crabmeat, drained

1 lime, juiced

2 tablespoons green onions, chopped

2 tablespoons cilantro, chopped

1/2 teaspoon chili powder

1/2 teaspoon kosher salt

1/8 teaspoon cumin

 

In a large saucepan, heat olive oil until it shimmers. Add onion, garlic and

jalapeno, and sauté until onion is translucent.

Add beer and cook until liquid is reduced to half.

Add cream and cheeses and stir until melted. Once melted, stir in crabmeat, lime

juice, onions, cilantro, chili powder, salt and cumin.

Transfer to a serving dish and serve hot with chips, tortillas, or pita.
