Fiesta Salsa – Slow Cooker Style

Impress your guests this weekend with homemade salsa! And what’s even better is this recipe makes itself while you’re away! Oh, the miracles of a slow cooker!

Just throw a few tomatoes in the bowl with some garlic, fresh jalapeño, and onion. Cover, cook, and let the magic happen. And, when I say magic I kind of mean it. Since there is not extra liquid in the bowl, the tomatoes literally roast.

It’s really pretty amazing!

 

 

Slow Cooker Salsa

SERVINGS : 8 PEOPLE COOK TIME : HOURS PREP TIME : MINUTES

INGREDIENTS

  • 4 vine ripe tomatoes
  • 2 cloves garlic, peeled
  • 1 cup onion, coarsely chopped
  • 1 jalapeno pepper, seeds and membranes removed
  • 2 tablespoons cilantro, chopped
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon coarse ground pepper

DIRECTIONS

  1. Place tomatoes, garlic, onion, and jalapeños in the bowl of a slow cooker.
  2. Cover and cook on low for 7-8 hours.
  3. Transfer contents to a blender or food processor, add cilantro, and pulse until well combined but still chunky.
  4. Season with salt and pepper.
  5. Store in an airtight container in the refrigerator. Or, freeze in resealable bags for up to 3 months.
