Grilled Pork Chop over Chickpea Bolognese and Green Beans

A nice twist on a traditional sauce. Typically a Bolognese sauce simmers and simmers for hours to develop rich complex flavors. Our version is super quick, and with the help of fire roasted tomatoes, it is pretty darn tasty. And instead of pasta we toss in some chickpeas. Enjoy!

Grilled Pork Chops over Chickpea Bolognese

SERVINGS : 4 PEOPLE COOK TIME : MINUTES PREP TIME : MINUTES

Ingredients

  • 1 1/2 pounds pork chops (bone-in)
  • kosher salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1/4 cup onion, diced
  • 1/2 cup carrot, very finely diced
  • 2 cloves garlic, minced or pressed
  • 15 ounces fire-roasted diced tomatoes, undrained
  • 15 ounces chickpeas, drained
  • 1 teaspoon dried oregano
  • 1 tablespoon parmesan cheese
  • kosher salt and pepper, to taste

Directions

  • Heat grill to medium high or use a cast iron skillet on the stovetop.
  • Season pork chops with kosher salt and pepper.
  • Grill chops 4-5 minutes per side depending on the thickness.
  • While the chops grill, heat olive oil in a skillet over medium high heat.
  • When the oil begins to shimmer, add onion and carrots. Cook for 3-4 minutes or until carrot is tender.
  • Add garlic and let cook just a minute.
  • Stir in tomatoes, chickpeas, oregano, and parmesan. Let simmer a few minutes.
  • Season to taste with salt and pepper.
  • Spoon chickpea bolognese on a plate and top with a pork chop.

Green Beans

Ingredients

  • 1 pound green beans, trimmed
  • 2 tablespoons butter, optional
  • kosher salt and pepper

Directions

  • Place green beans in a pan, cover with water, bring to a boil, reduce to a simmer, and let cook about 3 minutes or until bright green and crisp tender.
  • Drain water, add butter, toss to melt, and season with salt and pepper.

NOTES

KID NOTE: Surprisingly, the kids really liked the chickpeas.

    I used boneless pork chops and cooked them on the outside grill. I thought the chickpea sauce was great!
