Grilled Poblano and Corn Salsa

One of my favorite flavor combinations...poblano and corn. Wowzer! And as a salsa, or a pico of sorts, it is outstanding! Serve it with chips, as a topping for a piece of grilled chicken or fish, or tossed into a salad with a simple lime vinaigrette. So good!!

Grilled Poblano and Corn Salsa

SERVINGS : 6 PEOPLE COOK TIME : MINUTES PREP TIME : MINUTES

Ingredients

  • 1 poblano pepper
  • 4-5 ears corn
  • 1/2 red bell pepper, diced
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 teaspoon kosher salt
  • 1 teaspoon pepper
  • 1 lime, juiced

Directions

  • Grill poblano and corn over medium high heat for 10-12 minutes, rotating 2-3 times.
  • Remove the poblano and corn from the grill and let cool for 5-10 minutes.
  • Meanwhile, cut the bell pepper, onion, and cilantro and place in a medium sized bowl.
  • When the poblano and corn are cool enough to handle, gently remove the stem, skin, and seeds from poblano and dice; and cut the kernels from the corn.
  • Add the poblano and corn to the bowl. Stir to combine and season with lime juice, salt, and pepper.
