Breakfast is said to be the most important meal of the day, but on Christmas all the attention goes to the big holiday feast. This year, we are standing up for the first meal and giving you a recipe that will start Christmas day off strong.

 

Our Baked Blueberry French Toast is the perfect complement to gift opening. It is one of those wonderful breakfasts that can be prepared the night before, so that Christmas morning you simply sip your coffee while the smell of baking cinnamon wafts through your home.

 

Baked Blueberry French Toast

Prep time: 20 minutes

Cook time: 1 Hour

1 loaf French bread
8 large eggs
2 cups milk
1/2 cup heavy cream
1/2 cup sugar
1/2 cup brown sugar
2 tablespoons vanilla
1 cup blueberries
Topping
1/2 cup flour
1/2 cup brown sugar
1 teaspoon cinnamon
1/4 teaspoon kosher salt
8 tablespoons butter

 

Step 1: Lightly grease or butter a 9×13 baking pan. Cut or tear bread into 1-2” chunks and place in the pan.

 

Step 2: Whisk eggs with remaining ingredients (except blueberries) and pour over the bread. Sprinkle with blueberries and then gently toss to combine ensuring all the bread is moist.

 

Step 3: Cover with plastic wrap and place in the refrigerator overnight or at least 4 hours.

 

For the topping: Combine flour, sugars, cinnamon, and salt in a medium sized bowl. Cut the butter into 1T pieces.  Add the pieces of butter to the bowl. Then, using two knives, ‘cut’ the butter into the flour and sugar mixture. Continue to ‘cut’ the butter until your mixture resembles little sandy pebbles.

 

Preheat the oven to 350.

 

Step 5: Remove the baking pan from the refrigerator and sprinkle evenly with the topping. Bake
uncovered for about an hour.

 

Let rest for about 5 minutes. Don’t be discouraged when it ‘deflates’.

 

Slice and serve warm with maple syrup or whipped cream!
