Candied Jalapeno Pimento Cheese Stacks

Let me start off by saying “Yes, I realize this looks like a very odd combination”. But, trust me on this – you will love it. If you live in the south, you should be able to find candied jalapeños near the pickles at most grocery stores. Sweet and spicy pickles work well as a substitute. The pimento cheese recipe is actually ‘red pepper’ cheese. It’s delicious and takes very little time to whip up. Then stack it all together and BAM! Flavor explosion!

 

Candied Jalapeno Pimento Cheese Stacks

SERVINGS : 8 PEOPLE     PREP TIME : MINUTES

INGREDIENTS

  • 1/2 cup candied jalapenos or sweet and spicy pickle slices
  • multi-grain crackers
  • ‘Pimento’ Cheese
  • 10 oz sharp cheddar cheese, cubed
  • 1/2 cup mayonnaise
  • 1/4 teaspoon onion powder
  • 1 teaspoon ground mustard
  • 1/4 teaspoon cayenne pepper
  • 4 oz roasted red peppers, drained and chopped

DIRECTIONS

  1. Place the cubed cheese in a food processor (or grate with a cheese grater), process until finely chopped.
  2. Add remaining ingredients (except the peppers) and process until well combined.
  3. Stir in chopped peppers.
  4. Transfer pimento cheese into a serving bowl.
  5. Arrange crackers on a large plate. Place the bowl of pimento and a bowl of candied jalapenos in the center of the plate.
  6. Instruct your guests to spread a bit of pimento on each cracker and top with a slice of jalapeno.
