Buffalo Chicken Tostadas

What a fun and tasty meal! If you’re a fan of buffalo wings, or buffalo anything, you’ll love this! And it’s versatile. Make it into a salad, wrap it in a soft tortilla, or stuff it in a pita pocket. You really can’t go wrong. But, I have say – the crunch of the tostada was a winner.

 

Buffalo Chicken Tostadas

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 3 cups cooked chicken
  • 1/2 cup buffalo sauce, Frank’s Red Hot
  • 3 ears corn, kernels removed
  • 3 tablespoon canola oil, divided
  • 8 flour tortillas (or corn tortillas)
  • 1 avocado, peeled pitted and chopped
  • 1 tomato, chopped
  • 2 cups lettuce, chopped
  • 1/2 cup blue cheese dressing
  • 1/2 cup blue cheese crumbles

DIRECTIONS

  1. Toss chicken in buffalo sauce and set aside.
  2. Heat 1T oil in a heavy skillet over medium high heat. Once it begins to shimmer, add corn and cook until tender and slightly browned. Transfer to a paper towel lined plate and reserve.
  3. Add a bit more oil to the pan. Working in batches, crisp each tortilla for about a minute on each side or until they are golden and crispy.
  4. Place two tostada shells on each plate. Top with lettuce, tomato, chicken, avocado, dressing, and cheese.

NOTES

KID NOTE: Serve chicken without sauce. Leave the dressing and cheese on the side.

VEGETARIAN TIP: Replace the chicken with sautéed tofu.

GLUTEN MODIFICATIONS: Use corn tortillas.
