Sausage Rigatoni Ragu with an Italian Salad

‘Ragu’ is a meat based sauce that has been simmered with vegetables and stock. In this case our vegetables are onions, carrots, and zucchini. And our simmer time is short. If you have a little extra time in the morning, go ahead and throw the browned sausage and the rest of the sauce ingredients in the slow cooker. It is absolutely fantastic either way and goes great with any number of different pastas. I happen to like rigatoni because its holes hold the chunks of sausage and vegetables really well. Paired with a simple Italian salad, this is a great meal!!

Short Rib Noodle Bowl (Slow Cooker)

My kids love Ramen Noodles! But when they found out I was attempting to make them for dinner, there was a mixture of delight and skepticism. They immediately thought I was going to mess it up with a bunch of weird vegetables.  And I did add vegetables. And I also threw away the terrible foil ‘flavor packs’. But to their surprise, it was fantastic! Maybe even worthy of a spot on the menu of a trendy Ramen Bar. The flavors are wonderful, the beef is incredibly moist, the vegetables are tender, and of course noodles are always a hit!

Lemon Caper Flounder over Almond Citrus Couscous and Sautéed Spinach

This is my favorite meal of the week. And I don’t rank just based on flavor – although it is fantastic! I get excited when a meal is both delicious and easy to prepare. And this one is both! If you want to speed things up even more, don’t flour the fish. It’s perfect simply sautéed. Although the flour gives it a nice light crust, and still only takes about 15 minutes to prepare. The couscous and spinach pair perfectly with the fish and take less than 10 minutes. And it’s a gorgeous meal. Layer the couscous, spinach, fish, caper sauce, and a sprinkling of almonds. Beautiful! And delicious!

Deviled Chicken with Onion Roasted New Potatoes and Green Beans Almondine

Growing up my mom would make Lipton Onion Soup Roasted Potatoes for dinner a lot. They were fantastic and easy to make. But not very healthy when you consider what must be in that little soup pouch. So, here’s a great re-make using fresh onions and a handful of spices. It goes great with the simple marinated Deviled Chicken and fresh green beans. Really easy and really yummy! (You may notice the corn bread in the picture. Here’s the recipe!)

Turkey Meatball Sliders with Parmesan Zucchini Fries and a Fresh Mozzarella Salad

This is a must make meal! A total family pleaser that will have your kids begging you to make it again tomorrow. Which, might not be a bad idea! ;) The sliders are incredibly easy, juicy, and full of flavor. The parmesan zucchini is so good it will make a zucchini lover out of most anyone. And, the mozzarella salad adds a little cool freshness to the plate that my husband and I both appreciate. Stovetop to table is quick and painless! And the meal is awesomeness!

These are perfect for most any occasion! So, make a quick batch, pop open a beer, and enjoy the weekend!
