Buffalo Cauliflower Bites with Homemade Blue Cheese Dressing

Our family loves all things 'buffalo' and as crazy as it sounds we also love roasted cauliflower. Put the two together - Win! What I love about this particular recipe is the crispy coating on the cauliflower. It adds a nice crunch. That said, it's not a deal breaker, and could be skipped. But, I loved it and am planning on experimenting with other veggies. I have this feeling crispy green beans and Sriracha Mayo may be in my immediate future.

Buffalo Cauliflower Bites with Homemade Blue Cheese Dressing

Ingredients

  • 1 head cauliflower, cut into florets (about 3 cups)
  • Cooking spray
  • 3/4 cup all-purpose flour
  • 1 cup whole milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 1/4 cup buffalo hot sauce, like Frank's Red Hot
  • 2 tablespoons butter, melted
  • Blue Cheese Dressing
  • 1/2 cup mayonnaise
  • 1/4 cup whole milk
  • 1/4 cup sour cream
  • 1/8 teaspoon Worcestershire sauce
  • 1/3 cup crumbled blue cheese
  • kosher salt and pepper, to taste

Directions

  • Preheat oven to 450.
  • Line a rimmed baking sheet with foil. Place a metal rack in the center of the sheet and spray generously with cooking oil.
  • Combine flour, milk, garlic powder, salt and pepper in a large bowl.
  • Toss cauliflower florets in batter and place on wire rack. The florets should not touch each other.
  • Transfer to the oven and cook for 20-25 minutes or until golden brown.
  • Meanwhile, rinse and dry the bowl and combine the hot sauce and melted butter. Set aside.
  • In a small bowl combine dressing ingredients.
  • When cauliflower is cooked, transfer the florets to the hot sauce butter mixture using tongs. Carefully coat the florets.
  • Arrange bites on a plate and serve with dressing.

NOTES

KID NOTE: The kids loved the Buffalo Cauliflower but chose Ranch dressing over Blue Cheese.

GLUTEN MODIFICATIONS: Use gluten free all-purpose flour.
