Brown Butter Snapper over Mushroom Orzo and Green Beans

First of all, anything with Brown Butter is an automatic win in my book. Add mushroom orzo and I start to get very excited! So, when I say we are kicking off the week with the best meal, it's not a joke! Get ready to be amazed! Oh, and should I mention, this recipe is super easy. So open a bottle of wine and enjoy yourself in the kitchen tonight.

Mushroom and Parmesan Orzo

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

Ingredients

  • 1 cup orzo pasta
  • 2 tablespoons butter
  • 2 cups mushrooms, sliced
  • 1/4 cup dry white wine
  • 1/4 cup chicken stock
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 1/4 cup green onion, sliced
  • 3 tablespoons parmesan cheese, shaved

Directions

  • Cook pasta according to package directions, drain, and return to pot.
  • Heat butter over medium high until lightly browned.
  • Add mushrooms and sauté for a couple of minutes to let the edges brown slightly.
  • Pour in wine. Let the wine simmer down and mellow a bit – about 2-3 minutes.
  • Stir orzo into the pan with the mushrooms.
  • Add stock and let simmer for a couple of minutes.
  • Season with salt and pepper and garnish with onions and parmesan.

Brown Butter Snapper

Ingredients

  • 1 1/2 pounds red snapper
  • kosher salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 tablespoons butter

Directions

  • Season snapper with salt and pepper.
  • Heat olive oil in a skillet over medium high heat. When the oil begins to shimmer, add the snapper. Cook for 3 minutes, flip, and continue to cook for another 3-4 minutes or until the flesh separates easily with a fork and is opaque in the center.
  • Transfer to a plate and tent to keep warm.
  • Wipe any large pieces from the skillet.
  • Reduce the heat to medium and add the butter. Let the butter melt and stir constantly as to not burn. Once it begins to froth, remove it from the heat.
  • Plate the snapper and drizzle with brown butter.

Garlic-Butter Green Beans

Ingredients

  • 1 pound green beans
  • 2 tablespoons butter
  • 2 cloves garlic, minced or pressed
  • kosher salt and pepper, to taste

Directions

  • Heat butter in a skillet over medium high heat. Add green beans and garlic. Cook until green beans are crisp tender and slightly browned.
  • Season with salt and pepper and serve.

NOTES

KID NOTE: The did really well with this meal. They really liked the snapper, liked the orzo (after picking out all the mushrooms), and did great with the green beans.

VEGETARIAN TIP:  Swap the snapper for firm tofu.

GLUTEN FREE MODIFICATIONS:  Use rice or risotto instead of orzo. Follow the package directions.
